Baked cauliflower with peanut sauce
Fancy a new cauliflower recipe? Sliced and baked in the oven, but especially served with a creamy peanut sauce, it will be a delight.
Ingredients
Small meal For 4 people
2 cauliflowers of approx. 500 g each
4 tablespoons of sunflower oil
salt
½ file
150g creamy peanut butter
1 litre of vegetable stock, hot
40 g of salted roasted peanuts
2 spring onions
110 g of pomegranate seeds

Preheat the oven to 200 ° C. Cut the cauliflower, including the torso, into slices of approx. 3 cm thick. Arrange them on a baking sheet lined with parchment paper and brush them with oil. Add salt and cook in the centre of the oven for approx. 35 minutes.
Meanwhile, squeeze the lime. Pour the peanut butter into a bowl and stir in the boiling broth, stirring constantly. Add the lime juice and mix well. Coarsely chop the salted peanuts. Cut the spring onions into rings. Remove the cauliflower from the oven and sprinkle it with the peanut sauce. Sprinkle with the chopped peanuts, spring onions and pomegranate seeds and serve.
